Ten Vegetables You Should Eat To Enhance Your Health

I got curious the other day, asking myself the question, "Which vegetable is the healthiest?" You would think that would be an easy find, an easy answer! But to my surprise and amusement, most sources all cited something completely different. There were people who said onions were the most nutritious, people who sang the praises of collard greens, and others who really believe in their broccoli. I ended
up deciding that while plenty of people had vastly different answers to my question, all of these amazing vegetables have great nutrition benefits of their own. So here are ten veggies that you should definitely add to your diet, as they'll drastically improve your health! 1. Collard Greens. With large, deep green leaves rich in Vitamin E, Calcium, and Beta-carotene, this member of the cabbage family is very nutritious on top of being delicious southern cuisine. Collard Greens provide more than a good meal and healthy nutrition, however - they have also been used in anti-cancer research. Their leaves contain diindolymethane, selenium, and sulforaphane, which have all been shown to have effects that can combat cancer.
2. Onions. Onions may not work wonders for your breath, but when it comes to your body, this flavorful vegetable can work wonders. It's been shown to be a natural agent against tumors, as well as having amazing anti-inflammatory properties. Onions also happen to contain the most active of all flavanoids, - an antioxidant called quercetin. This helps your body ward off the damaging, aging effects that free-radicals have on it.
3. Red Peppers. (Bell peppers) These colorful vegetables not only make a lovely accent to any meal; they're also quite good for you. Red peppers are rich in antioxidants, reducing damage done in your body by free radicals. They are also bursting with vitamins A and C, and have been shown to reduce your risk for heart disease and stroke, due to their high levels of vitamins B6 and folic acid.
4. Sweet Potatoes. Whether they're put in a casserole, baked in a pie, or tossed into chowder, sweet potatoes aren't just for the holidays! And that's a good thing, because the nutrition in these bad boys is something you'll definitely want to be getting year round! They've got a lot of vitamins A (beta-carotene) and C, and these two work wonders in your body as antioxidants! Add that to the calcium, protein, iron, and fiber they contain and you've got way more than just a sweet treat, you've got a very nutritious veggie!
5. Broccoli. Besides being rich in vitamins A and C, broccoli has sulforaphane. Sulforaphane is really one of broccoli's biggest secret weapons. - It's an anti-cancer compound that really charges and stimulates your cells to create enzymes that help fight cancer. It's an amazing anti-cancer food.
6. Carrots. Everybody knows that carrots help improve your vision. The cause of this is beta-carotene, which the human body converts into vitamin A. Lack of vitamin A can lead to poor eyesight and by consuming it one can improve their vision. Carrots are also a good source of dietary fiber and Vitamin K. Carrots are very tasty and can be eaten in many different ways, raw, cooked, or in your favorite smoothie or juice blend!
7. Eggplants. Eggplants are not only good for you; they're extremely low in calories, making them a great diet food. They're a great source of fiber, copper, Vitamin B1, and potassium. The skin of the eggplant also contains plenty of antioxidants, and studies have shown it can help reduce risks of heart-related medical problems.
8. Spinach. Spinach is most well known for it's supposed "strength enhancing" abilities, made popular by the cartoon character Popeye. This line of thinking comes from a mistake made in the amount of iron people thought spinach had. - For a long while, it was thought spinach had extraordinary amounts of iron, but studies have found that it's iron content is really not more than "above average". But never fear! Spinach is still incredibly good for you! It's loaded with vitamins A, E and C, as well as magnesium! That's quite a lot for this amazing vegetable!
9. Celery. Celery is often used as a dieter's snack. - Something with so few calories, that is makes for a great snack food for anyone watching their weight. But unbeknownst to a lot of people is just how good for you celery really is! It contains a lot of vitamins A and C (Which pack a lot of antioxidant power.), as well as potassium, magnesium and calcium, making for a nutritionally packed vegetable!
10. Asparagus. Asparagus is great for getting your fiber and vitamin B6, as well as potassium. It is also one of the few vegetables loaded up with vitamin E! Asparagus also has an antioxidant called rutin that helps to strengthen the walls of your capillaries, and glutathione, which is known to help immensely in fighting cancer.
All of these vegetables have been shown to be extraordinarily healthy, and by adding these into your diet you're ensuring the health and wellbeing of yourself and your entire family! Don't go for just the "healthiest"! Go for all of these healthy veggies as they're all tasty and different enough to give a lot of variety to your foods!
